You might not have thought of wd~50 – Wylie Dufresne’s molecular gastronomy restaurant – for the drinks. But you should. Bar manager Kevin Denton whips up fun twists on the classics and a number of quirky inventions, bringing the same whimsy, experimentation and creativity found in the kitchen to the bar. You can go all out and eat at a table (make a reservation!), or walk in and grab one of the ten or so seats at the bar.
Who: Date to impress, a good friend, or a fabulous solo dining option
What: Clouds Over San Juan – Aerated Piña Colada. It consists of dehydrated coconut milk, Flor de Caña rum, pineapple juice and xanthan gum, all of which is then force-carbonated with the CO2 tank behind the bar (natch). It’s kind of like a pineapple coconut cloud of deliciousness.

Pro tip: Order any two courses off the tasting menu for $25 to go along with your libation.
